Step 1: Add the butter to a 10" (approx.) size oven-proof skillet, or a pie dish. Place in a 425°F oven until the butter has melted.
Step 2: Beat eggs and vanilla in a bowl with an electric mixer.
Step 3: Add the flour, milk and the salt and sugar and continue to beat mixture until smooth and well blended.
Step 4: Pour batter into the hot skillet (or pie dish), allowing the batter to from up the sides of the skillet.
Step 5: Bake for about 15 - 20 minutes or until the edges of the pancake are golden brown.
Step 6: In a small saucepan, warm the pie filling over low heat until thoroughly heated. Pour the heated pie filling into the center of the pancake. Sprinkle with walnuts (optional). Serve immediately.
