Ingredients

The ingredients are:
  • 1/2 cup pasta (dry pasta I used macaroni pasta)
  • 2 tablespoons butter
  • 1 teaspoon minced garlic
  • 2 tablespoons lemon juice
  • 4 cups fresh spinach (or more, large stems removed - rinsed and drained with water still clinging)
  • 1/4 teaspoon lemon pepper
  • 1/4 teaspoon salt
  • Grated parmesan cheese

How to Make

  • Step 1: Cook your choice of pasta according to package directions.

  • Step 2: While pasta is cooking, saute garlic in butter until garlic is golden and butter is slightly browned. Add lemon juice and washed spinach.

  • Step 3: Add pasta to the skillet as soon as spinach is wilted, toss to coat and simmer several more minutes to blend flavors. Serve with parmesan cheese sprinkled on top.
