Ingredients

The ingredients are:
  • Sandwich:
  • 8 slices pumpernickel or rye bread
  • 12 to 16 slices turkey or chicken (3-4 per sandwich)
  • 8 slices sharp white cheddar cheese (a good quality sharp white cheddar really is important)
  • 1 cup chutney
  • 4 tablespoons walnuts, chopped
  • 4 teaspoons butter
  • Apple Chutney:
  • 5 cups Gala apples (or something similar; you want a firm, but juicy apple, Braeburn, Cameo, Pippin)
  • 1/2 cup fresh cranberries
  • 1 teaspoon orange zest
  • 2 cups onions, diced
  • 1 teaspoon fresh ginger, minced
  • 1/2 cup brown sugar, packed
  • 1/4 cup cider vinegar
  • 1/2 teaspoon whole cloves
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon cardamon
  • 1/4 teaspoon cumin
  • 1/8 teaspoon tumeric
  • 1/8 ground red pepper
  • 1 tablespoon vegetable oil (not olive oil)

How to Make

  • Step 1: Chutney Base ... Add the oil to a sauce pan and bring to medium heat. Add the onion, and all the dried spices, and saute 5 minutes until the onion is tender. Make sure not to brown the onions.

  • Step 2: Add the apples, cranberries, orange zest, ginger, brown sugar, and vinegar; cook 15-20 minutes until the apples and cranberries begin to break down, but still retain a bit of texture - stirring often.

  • Step 3: Remove the cloves and then you can either serve warm; or, you can refrigerate for later use. At that time, you can either served chilled or reheat the chutney if you prefer.

  • Step 4: Sandwich ... Add a slice of cheese to the bottom bread slice, then the turkey or chicken, chutney, walnuts, another slice of cheese; and the bread slice. And, don't forget to butter the top slice.

  • Step 5: Grill ... I prefer a grill pan, but a saute pan will work well. Bring to medium heat and add the sandwich, buttered side down. Then immediately butter the top bread slice. Cook on medium heat, slowly so it doesn't burn, and it gives the cheese and the chicken time to melt and heat up. Each side will take a good 5-8 minutes.

  • Step 6: Serve and ENJOY!
