Ingredients

The ingredients are:
  • 16 cups green tomatoes, peeled, sliced
  • 1/2 cup pickling salt
  • 3 medium onions, peeled, chopped
  • 16 cups apples, peeled, chopped
  • 3 green peppers, seeded and chopped
  • 3 fresh hot peppers, (optional)
  • 4 cups vinegar
  • 3 tablespoons pickling spices
  • 6 cups brown sugar
  • 1 teaspoon chili powder

How to Make

  • Step 1: Layer the prepared tomatoes with the pickling salt. Add enough cold water to cover the tomatoes. Cover and refrigerate overnight

  • Step 2: Drain and rinse the tomatoes.

  • Step 3: Place tomatoes in a large pot, add onions, apples, peppers and vinegar. Bring to a boil, simmer for 30 minutes

  • Step 4: Tie the pickling spices in a gauze bag and add to the pot

  • Step 5: Stir in the brown sugar, simmer over low heat for 2 hours, Stir often be careful it doesn't scorch.

  • Step 6: Pour into sterilized jars, seal and waterbath them for 10 minutes
