Step 1: Place the chopped apples in a heavy saucepan along with the ginger, allspice, brown sugar and water.
Step 2: Bring to a boil and reduce heat; cover and simmer over low heat for about 5 minutes until apples are just soft but not falling apart.
Step 3: Set aside and keep warm by keeping lid on.
Step 4: Bring the milk to a boil; remove from heat and add the rolled oats.
Step 5: Return to low heat and stir for about 5 minutes until oatmeal has thickened and softened.
Step 6: Stir in 1/2 of the apple mixture and divide mixture into 4 bowls.
Step 7: Top these 4 bowls with the rest of the apple mixture and enjoy.
