Ingredients

The ingredients are:
  • 3 pounds pork loin roast (boneless)
  • 1 pound sauerkraut
  • 1 medium yellow onion, sliced thin
  • 4 garlic cloves, sliced thin
  • 5 medium potatoes, quartered
  • 1 tablespoon butter
  • 1 tablespoon oil (olive oil)
  • 1/2 teaspoon fennel seeds
  • 1/4 teaspoon rubbed sage
  • 1 tablespoon garlic flakes
  • 1 tablespoon hot sauce (BBW Wild dipping sauce)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Grey Poupon mustard
  • 1/4 cup white wine (or 1/4 cup beer, more if needed)
  • Salt and pepper, to taste

How to Make

  • Step 1: Heat large cast iron skillet over medium heat.

  • Step 2: Salt and pepper pork roast well on all sides.

  • Step 3: Add olive oil and pork roast to the hot skillet.

  • Step 4: Brown pork on all sides for about 10 minutes.

  • Step 5: While pork is browning slice onion and place in bottom of crock pot.

  • Step 6: Slice the garlic and add to onions in crock pot.

  • Step 7: Add fennel seed and rubbed sage to mixture in crock pot.

  • Step 8: Put sauerkraut in crock pot on top of onion/ garlic

  • Step 9: Turn crock pot to high heat and cover.

  • Step 10: Mix minced garlic flakes, hot sauce, balsamic vinegar, mustard, and wine in a tea cup.

  • Step 11: Place pork in crock pot and cover.

  • Step 12: Melt butter in the skillet with a small amount of wine or beer and deglaze the pan.

  • Step 13: Pour this over the roast.

  • Step 14: Quarter the potatoes and add to the crock pot.

  • Step 15: Sprinkle more garlic flakes on top of all.

  • Step 16: Pour the vinegar and hot sauce mixture evenly over all items in crock pot.

  • Step 17: Add more salt and pepper if desired.

  • Step 18: Cook on high heat for 1 - 1.5 hours.

  • Step 19: Turn heat to low and cook for an additional 6.5 to 7 hours, until pork is done.

  • Step 20: Serve while still hot!
