Ingredients

The ingredients are:
  • 1 pound tilapia fillets, thawed and pressed between paper towels
  • 2 stalks celery, sliced thin
  • 1 bunch (6) green onions, sliced thing, including about 2 inches of green
  • 1 zucchini, halved lengthwise and sliced thin
  • 1 yellow summer squash, halved lengthwise and sliced thin
  • 2 tablespoons Catalina Seafood Seasoning
  • 1 (14.5 ounce) can low sodium diced tomatoes, undrained

How to Make

  • Step 1: Preheat oven to 350F; line a shallow baking dish with aluminum foil, leaving enough extra to fold into a pouch.

  • Step 2: Place fish in a single layer in the bottom of prepared pan.

  • Step 3: Scatter vegetables in layers over fish.

  • Step 4: Sprinkle seafood seasoning over vegetables.

  • Step 5: Pour can of tomatoes over top of all, spreading evenly.

  • Step 6: Fold or roll foil to form a pouch around everything.

  • Step 7: Bake at 350F for 30 minutes, or until vegetables are tender and fish flakes easily when tested with a fork.
