Ingredients

The ingredients are:
  • 1/4 cup oil (canola or olive)
  • 2 tablespoons lemon juice
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon basil (dried)
  • 1/2 teaspoon oregano (dried)
  • 1/2 teaspoon thyme (dried)
  • 1/2 teaspoon salt (I use sea salt)
  • 1/2 teaspoon freshly ground black pepper
  • 2 salmon fillets (steaks, cut into 1 inch pieces)
  • 8 to 10 cherry tomatoes
  • 1 red bell pepper (cut in pieces, or yellow pepper)
  • 1 green pepper cut in pieces
  • 1 sweet white onion (cut in pieces)

How to Make

  • Step 1: Soak wooden skewers in warm water - about 10 minutes.

  • Step 2: In a mixing bowl combine and whisk together the oil, lemon juice, balsamic vinegar, the dried herbs, salt and freshly ground pepper.

  • Step 3: Add the salmon, cherry tomatoes, bell peppers and onion, marinate for about half an hour.

  • Step 4: Using the wooden skewers alternate ingredients starting and ending with a red cherry tomatoes - cherry tomato, a piece of salmon, red pepper, onion, green pepper. Continue the process for the desired number of skewers - always ending with a cherry tomato.

  • Step 5: On an outdoor or indoor grill on medium to high grill the skewers 6-8 minutes turning once. Cooking times may vary from grill to grill, plate when salmon is done.
