Ingredients

The ingredients are:
  • 1 can (19 ounce) black beans, undrained or rinsed
  • 1/2 cup salsa (your favorite mild, medium or hot)
  • 1 teaspoon chili powder
  • 1 can (16 ounce) low sodium chicken broth
  • 4 tablespoons cottage cheese (whipped, or use sour cream)
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh cilantro, chopped

How to Make

  • Step 1: Mix all the ingredients, except whipped cottage cheese, chives and cilantro together in a pot.

  • Step 2: If you wish partially mash the beans or leave them whole

  • Step 3: Bring to a boil, simmer about 5 minutes

  • Step 4: Serve in bowls, top with whipped cottage cheese, chives and cilantro
