Ingredients

The ingredients are:
  • 1/2 medium sweet onion
  • 1/2 bell pepper, any color (I used small pieces of red and yellow pepper from my freezer)
  • 1/2 teaspoon minced garlic
  • 2 teaspoons olive oil
  • 3 to 4 ounces fresh spinach, stems removed and roughly chopped
  • 2 eggs, beaten
  • 1 tablespoon cottage cheese
  • 1/8 teaspoon dried thyme
  • Salt and pepper to taste
  • Marinara sauce
  • Parmesan cheese

How to Make

  • Step 1: Saute onion, pepper, and garlic in olive oil until soft. Add chopped spinach and cook until wilted.

  • Step 2: Beat the eggs with the cottage cheese until frothy. Add the thyme, salt and pepper to taste. Pour over the veggies and scramble.

  • Step 3: Plate and top with warmed marinara sauce. Sprinkle on parmesan cheese and serve.
