Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breasts (cut in 3 pieces)
  • 1 cup smoked ham, diced (I get 1/4" thick deli sliced)
  • 1 small onion, thin sliced
  • Sauce:
  • 1 (11 ounce) can low fat cream of chicken soup
  • 1/2 cup light sour cream
  • 1 cup Swiss cheese, shredded
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh parsley, minced
  • Pepper to taste
  • Bread Crumbs:
  • 1 cup fresh bread crumbs (approximately 3 slices)
  • 1 tablespoon fresh parsley
  • 1/4 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 teaspoon butter

How to Make

  • Step 1: Bread Crumbs ...In a food processor pulse the bread to get a coarse ground - you will need 3-4 slices depending on the bread you use. You want to end up with 1 cup. Then, add the paprika, Italian seasoning, parsley, salt and pepper; pulse again to combine. In a small saute pan on medium high heat, add the butter and melt; then add the bread crumbs and toss well to coat. Cook until golden brown, make sure to stir often so they do NOT burn. Remove and set to the side.

  • Step 2: Sauce ...Add the soup, sour cream, mustard, pepper and parsley to a small bowl and mix well.

  • Step 3: Chicken -- Spray a small casserole dish with Pam or any non-stick spray and add the chicken, then the ham and top with the soup mixture.

  • Step 4: Bake ... In a 325 degree oven, middle shelf, uncovered for 20 minutes. Then, add the cheese, and top with the bread crumbs and cook until golden brown and bubbly, another 20-25 minutes.

  • Step 5: Serve ... Perfect to serve with rice pilaf and a fresh vegetable. Comfort food!
