Ingredients

The ingredients are:
  • 1 pound ground beef
  • 1 cup mushrooms, sliced
  • 1 green bell pepper, diced
  • 6 to 8 scallions,with tops, sliced
  • 15 ounces pinto beans (canned, drained and rinsed)
  • 15 ounces tomato sauce (canned)
  • 1/4 cup hot sauce (I use Cajun Power brand)
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups cheddar cheese, shredded

How to Make

  • Step 1: Brown ground beef in a large skillet; drain and return to pan.

  • Step 2: Add green pepper, mushrooms and scallions and cook, stirring occasionally, until vegetables are tender (about 15 minutes).

  • Step 3: Add beans, tomato sauce, hot sauce and herbs; simmer, stirring occasionally, until heated through (about 10 minutes).

  • Step 4: Serve in bowls, each sprinkled with 1/2 cup cheese.
