Step 1: Brown ground beef in a large skillet; drain and return to pan.
Step 2: Add green pepper, mushrooms and scallions and cook, stirring occasionally, until vegetables are tender (about 15 minutes).
Step 3: Add beans, tomato sauce, hot sauce and herbs; simmer, stirring occasionally, until heated through (about 10 minutes).
Step 4: Serve in bowls, each sprinkled with 1/2 cup cheese.
