Ingredients

The ingredients are:
  • 1 (4 to 5 pound) eye round of beef roast
  • 2 onions, sliced
  • 3 cups dry white wine
  • 1 cup oil
  • 6 to 8 cloves garlic, minced
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 teaspoon dryed rosemary
  • 1 teaspoon celery seeds
  • 1 teaspoon dryed thyme
  • 1 teaspoon dryed sage
  • Small pinch cayenne

How to Make

  • Step 1: Whisk the wine, oil, garlic and all the remaining spices in a bowl. Transfer to a resealable bag.Add in the roast and onions. Turn the bag a few times then refrigerate a day (24 hours).

  • Step 2: When you ready to gill. Preheat grill. Place roast on rotisserie spit making sure to get it as balanced as you can. Secure tightly and place on grill over a high heat. Reduce heat, or move coals away from roast after 15 minutes. Continue cooking until done, about 1 hour 10 minutes (for rare).

  • Step 3: Meanwhile pour 2 cups of the marinade into a saucepan. Bring to a boil. Remove from heat and add butter. Baste roast with mixture every 30 minutes during the cooking time.

  • Step 4: Remove the roast from spit. Allow to rest for 15 minutes, then slice and enjoy.
