The ingredients are:
  • 4 tablespoons oil (divided (olive oil)
  • 1 cup chopped celery
  • 4 cups chopped asparagus (cut into 1-inch pieces)
  • 1/2 cup green onion, sliced
  • 4 (1 pound) fresh boneless skinless chicken breast (sliced 1/4-inch thick)
  • 2 teaspoons orange zest
  • 2 garlic cloves, minced
  • 2 teaspoons orange-lemon pepper seasoning (divided)
  • 1/2 red bell pepper (sliced thin)
  • 1/2 cup water
  • 2 tablespoons orange juice concentrate (frozen, thawed)
  • 2 tablespoons low-sodium soy sauce
  • 4 teaspoons cornstarch

How to Make

  • Step 1: Heat 2 tablespoons oil in a large skillet or wok; add celery and stir-fry 1-2 minutes.

  • Step 2: Add asparagus and onion to pan; sprinkle with 1 teaspoon orange-lemon pepper seasoning and stir-fry 5 minutes. Remove vegetables from pan and keep warm.

  • Step 3: Add remaining 2 tablespoons oil to pan; add chicken, orange zest and garlic and stir-fry until cooked through, about 10 minutes.

  • Step 4: Combine water, orange juice concentrate, soy sauce, and cornstarch in a small bowl.

  • Step 5: Return vegetable mixture to pan; add sauce and stir-fry 5 minutes.

  • Step 6: Add red pepper to pan and stir-fry 5 minutes.
