Ingredients

The ingredients are:
  • 2 1/2 pounds parsnips, peeled, cut into 3 x 1/2 inch strips (like french fries)
  • 1 tablespoon fresh rosemary, finely chopped
  • 5 sprigs of fresh rosemary
  • 1 large clove garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon cumin or more

How to Make

  • Step 1: Preheat oven to 450f

  • Step 2: Mix prepared parsnips, chopped rosemary, garlic and oil. place on a large rimmed bake sheet. Season with salt and pepper. Toss to evenly coat the parsnips. Have them in a single layer

  • Step 3: Roast 10 minutes turn and roast until the parsnips are tender about 10-15 minutes longer

  • Step 4: Crumble the rosemary sprigs, discard the stems and sprinkle over the parsnip fries, toss and sprinkle on the cumin. Add more cumin if desired
