Ingredients

The ingredients are:
  • 3 - 4 large vine ripened tomatoes thickly sliced
  • Marinade:
  • 1/2 cup extra virgin olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup celery, chopped
  • 1/4 cup green onion, chopped
  • 1 teaspoon sugar (I use splenda)
  • 1 teaspoon dry mustard
  • 3 cloves garlic, smashed
  • 1 tablespoon fresh basil, chopped, (or 1 teaspoon dried basi but fresh is preferred)

How to Make

  • Step 1: Put tomato slices overlapping on a low sided glass dish

  • Step 2: Put marinade ingredients in a jar with a lid and shake to blend, save a few bits of green onion for garnishing.

  • Step 3: Pour marinade evenly over tomatoes; sprinkle saved green onion bits over and cover with plastic wrap and refrigerate for at least one hour befor serving.
