  • 3 small red potatoes, quartered
  • 1 teaspoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground pepper

How to Make

  • Step 1: Preheat oven to 400f degrees. Scrub and quarter potatoes, rinse in cold water, dry with papper towel. Combine oil, oregano, salt and pepper in a medium bowl; add the potato quarters; stir well to coat.

  • Step 2: Line an oven tray with tin foil, spray foil with veggie spray. Place the potato quarters in a single layer on tray; cook in 400f degree oven for 10 minutes; turn quarters over; reduce heat to 350f degrees and cook a further 10 minutes, until golden.
