Ingredients

The ingredients are:
  • 5 bacon slices (I use low sodium)
  • 5 tablespoons oil, coconut (virgin coconut oil )
  • 1 medium onion, chopped
  • 1 1/2 teaspoon curry powder
  • 1 small cabbage head, shredded
  • 1 teaspoon lemon pepper
  • 1/4 cup chicken broth (if needed)
  • 1/4 to 1/2 cup flaked coconut (toasted)

How to Make

  • Step 1: Fry bacon in large skillet until crisp and place on wire rack or between paper towels and set aside.

  • Step 2: In same skillet over medium heat add coconut oil, onion and curry powder and saute for 2 - 3 minutes.

  • Step 3: Add shredded cabbage and lemon pepper.

  • Step 4: Cover and cook, stirring occasionally until cabbage is soft; add a wee bit of broth as needed.

  • Step 5: Break bacon into pieces and stir into cabbage along with salt to taste.

  • Step 6: Garnish with toasted coconut and enjoy!
