Ingredients

The ingredients are:
  • 2 carrots,large (peeled and sliced)
  • 1/4 cup water
  • 4 cups water, ice water
  • 2 cups broccoli (frozen broccoli florets, thawed)
  • 1 onion, small (chopped about 1/2 cup)
  • 1 to 3 garlic cloves, minced
  • 1/2 cup mayonnaise (olive oil mayonnaise, more or less, depending on preference)
  • Rustic Tuscan Seasoning (1 to 2 tablespoons)
  • 1/8 teaspoon sea salt

How to Make

  • Step 1: Place carrots and water in a microwave-safe dish; cover and microwave on high 4-5 minutes, until crisp-tender.

  • Step 2: When carrots are done, plunge immediately into ice water to prevent cooking further; drain well when cool.

  • Step 3: Combine carrots, broccoli, onion and garlic in a large bowl; toss to mix well.

  • Step 4: Combine mayonnaise, Tuscan seasoning, and salt; add to vegetables and mix thoroughly.

  • Step 5: Cover and refrigerate until serving, at least one hour.
