Ingredients

The ingredients are:
  • 2 pounds ground beef
  • 1 large onion, diced
  • 1 medium bell pepper, diced
  • 2 (1 1/4 ounce) packages taco seasoning or your own blend
  • 1/4 cup water
  • 16 ounces salsa
  • 1 (8 ounce) can fiesta corn
  • 8 ounces cheddar cheese, shredded
  • 20 ounces cornbread mix (2 packages) made according to package directions, set aside
  • Sour cream for serving and garnish (optional)
  • Jalepenos for serving and garnish (optional)

How to Make

  • Step 1: In a large skillet, cook ground beef, onions and bell peppers over medium heat until meat is no longer pink, drain grease. IN a large skillet, cook beef, onion and bell peppers over medium heat untilo meat is no longer pink, drain grease.

  • Step 2: Add taco seasoning packets, water, salsa and corn. Stir to combine.

  • Step 3: Heat mixture until heated through, letting flavors blend.

  • Step 4: Transfer mixture to a lightly greased baking or casserole dish.

  • Step 5: Sprinkle cheese over the top.

  • Step 6: If you haven't already made the cornbread according to package directions, do that now.

  • Step 7: Spoon batter evenly over the top of the casserole. Try to even out with a spatula.

  • Step 8: Bake uncovered at 350 degrees for 40-45 minutes or until a toothpick inserted comes out clean.

  • Step 9: Serve with sour cream, jalapenos or your favorite taco garnishments. Enjoy!
