Ingredients

The ingredients are:
  • 1 3/4 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/4 cup vegetable oil
  • 3/4 cup light sour cream or yogurt
  • 2 teaspoons vanilla extract
  • 1 cup mashed ripe banana - I just used one medium banana, I didn't measure
  • 1/3 cup semisweet mini chocolate chips

How to Make

  • Step 1: In a large bowl combine the flour, sugar, baking powder, baking soda and salt. In a small bowl, combine the egg, oil, sour cream and vanilla. Stir into dry ingredients just until moistened.

  • Step 2: Fold in banana and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 22-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
