Ingredients

The ingredients are:
  • 4 tomatoes, chopped
  • 1 lettuce, of choice, torn
  • 2 potatoes
  • 3 cups fresh green beans, ends trimmed
  • 1 cup cooked tuna (canned tuna)
  • 6 anchovy fillets
  • 2 eggs
  • 1/2 cup black olives
  • 2 tablespoons chopped fresh green herbs of choice
  • Salt and pepper
  • 1 cup lemon viniagrette (made with olive oil or dressing of choice)

How to Make

  • Step 1: Prepare a large Mediterranean-themed bowl. Boil the potatoes in their skins for 15 minutes or until ready, peel them and cut them in quarter. Steam the green beans until just tender (not soft).

  • Step 2: Wash, drain and separate the lettuce leaves. Boil the eggs, peel them and cut them in quarter. Drain the anchovies and tuna. Quarter the tomatoes.

  • Step 3: Drizzle the tomatoes and beans with some dressing. Season the lettuce leaves with salt and pepper. Place them around a bowl. Arrange the potatoes in the bottom of the bowl.

  • Step 4: Decorate with the beans, tomatoes, tuna, anchovies. eggs, black olives. Pour in the remaining viniagrette. Sprinkle with fresh herbs. Bon appetit!
