Step 1: In a medium glass just with a tight fitting lid combine lemon juice, extra-virgin olive oil, salt, black pepper, Italian seasoning, chopped garlic and cayenne pepper; seal the container tightly and shake to emulsify the mixture.
Step 2: Remove the lid and add artichoke hearts. Reseal the lid and continue shaking the container until the artichoke hearts are completely coated.
Step 3: Refrigerate for at least 1 day gently shaking the jar frequently while chilling.
