The ingredients are:
  • 2 logs (4 ounces each) goat cheese (use soft goat cheese, cut into total of eight 1-inch slices)
  • 1 can (14.5 ounce) petite diced tomatoes, drained
  • 1/4 cup kalamata olives (coarsely chopped, use pitted)
  • 1 teaspoon chopped fresh thyme leaves
  • 1/4 crushed red pepper flakes
  • 2 tablespoons oil (olive oil)
  • Baguette slices (24 slices, cut 1/2-inch thick then toasted)

How to Make

  • Step 1: Heat oven to 350°F. In ungreased 1-quart shallow ovenproof gratin dish or 9-inch glass pie plate, place goat cheese in single layer.

  • Step 2: Sprinkle tomatoes, olives, thyme leaves and red pepper flakes over cheese. Drizzle with olive oil. Bake 15 to 20 minutes or until warm.

  • Step 3: Serve with baguette slices.
