Ingredients

  • 3 cups cooked white rice
  • 1 1/2 cups sour cream
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1 garlic clove, minced finely
  • 1 (4 ounce)can chopped green chilies, undrained
  • 2 cups shredded Monterey Jack cheese, divided
  • Salt and pepper to taste

How to Make

  • Step 1: Preheat oven to 350 degrees F. Mix rice, sour cream, milk, eggs, garlic, chilies, 1-1/2 cups cheese large bowl, then add in salt and pepper.

  • Step 2: Pour into greased 2 quart glass casserole dish and sprinkle with remaining cheese. Bake at 350 degrees F for 40-45 minutes until set.
