Step 1: Mix together the soy sauce, rice vinegar, brown sugar and hot sauce; set aside.
Step 2: Mix the beef and cornstarch together and add to the soy sauce mixture.
Step 3: In a wok or large skillet, bring oil to medium-high heat.
Step 4: Add the meat, mushrooms, garlic, onion and ginger and cook stirring occasionally until meat is slightly browned. (Add a bit of water if this starts to stick.)
Step 5: Add baby bok choy and cook until slightly wilted.
Step 6: Serve over cooked rice or cooked bean sprouts or by itself.
