Ingredients

The ingredients are:
  • 3/4 pound dry pasta (cooked according to package directions)
  • 1 cup fresh basil, julienned
  • 1/2 to 1 cup grated Parmesan cheese (or pecorino romano, grated)
  • FOR DRESSING
  • 35 grams oil-packed sun-dried tomatoes (about 7 tomatoes, drained and fine chopped)
  • 1 1/2 teaspoons capers, drained
  • 1 to 2 garlic cloves, minced (use more garlic if you like, I use 2)
  • 6 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Pepper, to taste

How to Make

  • Step 1: Pasta ... Cook the pasta according to package directions, drain and set to the side to keep warm. I happen to like bow tie, but penne, fettuccine, or corkscrew pasta would work well.

  • Step 2: Dressing ... Mix everything in a small and set to the side.

  • Step 3: Finish ... Add the pasta to a serving bowl along with the basil and 1/2 cup of the parmesan cheese. Add the dressing and toss to combine, garnish with additional cheese if you want. ENJOY!
