Ingredients

The ingredients are:
  • 1 medium cauliflower (cut into small florets)
  • 2 cups fresh spinach (packed)
  • 3 medium tomatoes (chopped into large chunks)
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dried basil
  • 1/2 cup chicken broth
  • 3/4 cup grated cheddar cheese (sharp)

How to Make

  • Step 1: Preheat oven to 350f degrees. Wash and separate the cauliflower; place in a medium sized casserole dish. Add the tomato chunks and spinach, salt, cayenne pepper, basil and 1/2 cup of the cheese; mix well to combine. Carefully pour chicken broth over.

  • Step 2: Sprinkle the remaining cheese over the top of the veggies; bake for 25 to 30 minutes until the cheese has melted and the veggies are bubbling around the edges.
