Ingredients

The ingredients are:
  • 1 pound bacon or breakfast sausage
  • 1 onion, diced
  • 1/2 bell pepper, diced
  • 1 teaspoon olive oil
  • 1 (32 ounce) package frozen tater tots
  • 10 large eggs
  • 3/4 cup milk
  • 2 cups cheddar cheese, shredded or your favorite cheese mix
  • 10 to 15 slices jarred jalepeno's
  • Salt and pepper to taste

How to Make

  • Step 1: Cut bacon into bite size pieces and fry until crisp. If using the sausage, fry until done. Drain meat.

  • Step 2: Saute onion and bell pepper in olive oil until tender. Mix with the cooked meat.

  • Step 3: Spray a 9x13 pan with oil and lay meat and onions and peppers on the bottom. Layer tater tots on top of the meat.

  • Step 4: Mix eggs, milk, salt and pepper, jalepenos and cheese together. Pour mixture evenly over the top of the tater tots.

  • Step 5: Bake at 400° for 40 minutes or until browned nicely.
