Ingredients

The ingredients are:
  • 3 1/2 cups fresh mango, peeled and chopped into 1/2" chunks, about 2 large mangos, not too ripe.
  • 2 1/2 cupswhite sugar
  • 1 cups brown sugar
  • 1 cup apple cider vinegar
  • 1/2 cup cooking raisins
  • 1/4 cup fresh ginger root, grated, or can use the minced ginger in a jar
  • 2 tablespoons minced garlic
  • 2 tablespoons salt
  • 1 teaspoon ground cloves
  • 2 tablespoons pickled hot pepperocini, finely chopped, or less depending on how hot you like it

How to Make

  • Step 1: In a large bowl, combine mangos and sugars. Stir until sugars liquify. Cover with plastic wrap. Let set on counter overnight.

  • Step 2: In a large saucepan, pour mango mixture and the rest of the ingredients. Stir well, and occasionally for 45 to 60 minutes. Pour into sterile jars with lids. Keep well refrigerated for several months.
