Step 1: Cut the heads of garlic in half crosswise.
Step 2: Place them on top of two layers of foil.
Step 3: Drizzle the garlic with olive oil.
Step 4: Fold foil wrap into a packet and roast in a 400 degree Fahrenheit oven for 40 minutes.
Step 5: Allow to cool so to make handling easier.
Step 6: Squeeze out the pulp; mix well with the remaining ingredients.
Step 7: Scoop into a serving vessel and serve.
