Ingredients

The ingredients are:
  • 1 tablespoon olive oil or peanut oil
  • 3 tablespoons shallots, peeled, finely chopped
  • 2 bunches red or regular swiss chard, washed, spin dried, tough bottom stem removed, torn in to 2 inch pieces
  • 1/4 cup feta cheese crumbled
  • Salt and pepper to taste
  • 2 tablespoon pine nuts, lightly toasted

How to Make

  • Step 1: In a wok or skillet add oil and heat on medium, add shallots and stir fry for 1-2 minutes

  • Step 2: Add prepared swiss chard, toss with shallots and cover the pan, cook 2 minutes

  • Step 3: Remove cover and cook a further minute. Drain any liquid

  • Step 4: Stir in the feta cheese, 30 seconds, add pine nuts and season with salt and pepper
