  • 3 tablespoons oil (vegetable oil)
  • Salt, to taste
  • 3 tablespoons dill pickle juice
  • 1 teaspoon fresh dill, chopped (or 1/2 teaspoon dried dill weed)

How to Make

  • Step 1: Bring potatoes to a boil in salted water.

  • Step 2: Cook until fork tender; drain.

  • Step 3: Spread potatoes on a tea towel and allow cooling for 5 minutes.

  • Step 4: Preheat oven to 450 degrees Fahrenheit.

  • Step 5: Line a rimmed baking sheet with foil and coat with 1 tablespoon vegetable oil.

  • Step 6: Gently flatten potatoes with a spatula.

  • Step 7: Place potatoes on baking sheet and drizzle with 1 tablespoon oil and sprinkle with salt.

  • Step 8: Bake until golden brown, about 20 minutes, turning halfway through.

  • Step 9: Remove from oven and toss with remaining oil, pickle juice and dill.
