Step 1: Bring potatoes to a boil in salted water.
Step 2: Cook until fork tender; drain.
Step 3: Spread potatoes on a tea towel and allow cooling for 5 minutes.
Step 4: Preheat oven to 450 degrees Fahrenheit.
Step 5: Line a rimmed baking sheet with foil and coat with 1 tablespoon vegetable oil.
Step 6: Gently flatten potatoes with a spatula.
Step 7: Place potatoes on baking sheet and drizzle with 1 tablespoon oil and sprinkle with salt.
Step 8: Bake until golden brown, about 20 minutes, turning halfway through.
Step 9: Remove from oven and toss with remaining oil, pickle juice and dill.
