Ingredients

The ingredients are:
  • 4 boneless, skinless chicken breast halves, cut into 1/4-inch-thick strips
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 small zucchini, sliced into rounds
  • 1 1/2 cups baby carrots, halved lengthwise
  • 3 cloves garlic, minced
  • 2 tablespoons dried basil (or 1/2 cup fresh, minced)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon dry chipotle seasoning mix (mine was raspberry chipotle)
  • 2 tablespoons olive oil
  • 1 cup grated Parmesan cheese

How to Make

  • Step 1: Coat a 9x13-inch baking dish with cooking spray; preheat oven to 375F.

  • Step 2: Arrange strips of chicken on bottom of dish.

  • Step 3: In a large bowl, combine all the vegetables and the garlic; toss until evenly mixed.

  • Step 4: Spoon vegetables over chicken; sprinkle with seasonings and drizzle with olive oil.

  • Step 5: Cover tightly with foil and bake at 375F for 30 minutes; remove foil and bake an additional 5 minutes.

  • Step 6: Sprinkle each serving with Parmesan cheese to serve.
