Ingredients

The ingredients are:
  • 6 large (3 to 4 pounds) potatoes (or 8 medium potatoes, peeled and cut up)
  • 1 tablespoon butter
  • 1 cup chopped yellow onions (fine chopped)
  • 2 cups chopped cabbage(or kale or other greens)
  • 1/2 cup milk (more if you need it)
  • 1/3 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

How to Make

  • Step 1: In a large sauce pan bring water to a boil and cook potatoes in water until tender, but not mushy. Drain well.

  • Step 2: In the meantime: Melt butter in large skillet. Add onions and cook until tender.

  • Step 3: Stir in cabbage or greens, and cook 5 more minutes, then remove from heat. Set aside.

  • Step 4: Using a mixer on medium setting, mash potatoes, milk, sour cream, salt and pepper.

  • Step 5: Stir in cabbage or greens mixture, making sure it is mixed in well.

  • Step 6: Spoon into serving dish, and cover with aluminum foil until ready to serve.
