  • 1/4 cup red pepper, chopped
  • 1/4 cup yellow pepper, chopped
  • 1/4 cup green pepper chopped
  • 16 green beans, trimmed, cut in half
  • 16 yellow beans , trimmed, cut in half
  • 1 teaspoon extra virgin olive oil
  • 2 teaspoons grated lemon rind
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons pine nuts, toasted (optional)

How to Make

  • Step 1: Put the beans in boiling water and cook for 7 minutes, remove, drain run under cold water

  • Step 2: Place the teaspoon of oil in a skillet and stir fry the peppers for 4 minutes

  • Step 3: Mix together the pepper and beans in an oven proof dish

  • Step 4: Sprinkle on the lemon zest, add lemon juice bake in 375 oven for 15 to 20 minutes just to heat through. Do not over cook - You want the veggies to have some crunch.

  • Step 5: Sprinkle on the toasted pine nuts and serve
