Ingredients

The ingredients are:
  • 8 ounces ground lamb, browned
  • 1/2 cup onion, finely chopped
  • 1/4 cup fresh mushrooms, finely chopped
  • 1 jalapeno, finely chopped, use two if you like spice omit if you don't like spice.
  • 2 large garlic cloves, finely chopped
  • 1 cup cooked rice
  • 1/2 teaspoon fresh oregano
  • 1/4 teaspoon dried cumin
  • 5 drops hot sauce, tobasco or your favorite
  • 4 tablespoons tomato paste
  • Salt and pepper to taste
  • 4 tablespoons parmesan cheese, grated
  • 2 coloured peppers, red, yellow, orange, green your choice, cut top to bottom, seeds and membrane removed

How to Make

  • Step 1: After browning the lamb add prepared onions, mushrooms saute 5 minutes

  • Step 2: Add jalapeno, salt, pepper, oregano, cumin, hot sauce and tomato paste, saute a few more minutes

  • Step 3: Divide the lamb mixture between the for half prepared peppers

  • Step 4: Place on an oven proof tray, bake lightly covered with foil in a 375 oven for 15 minutes

  • Step 5: Remove foil, add chesse, continue baking for a further 10 minutes or until the cheese is lovely and brown Serve hot
