  • 4 slices prosciutto, very thin slices, chopped
  • 8 eggs
  • 1 teaspoon dry Italian seasoning
  • 1/2 cup mozzarella cheese, grated
  • 1/4 cup parmesan, grated
  • Pepper to taste

How to Make

  • Step 1: Add 1 tablespoon of butter to a skillet, medium heat and lightly brown the prosciutto

  • Step 2: Whip the eggs, Italian seasoning, mozzarella and pepper

  • Step 3: Add the second tablespoon of butter to the sillet with the prosciotto, add egg mixture, stirring until cooked about 5 minutes

  • Step 4: Sprinkle with parmesan and serve
