Ingredients

The ingredients are:
  • 1 chicken breast, cut in thin strips
  • 1 (35 gram) package fajita seasoning
  • 2 cups mixed red and green sweet peppers, cut into small dice
  • 1 cup sweet onion, chopped
  • 2 jalapenos, seeded, membranes removed, finely chopped
  • 200 milligrams vegetable broth, low sodium
  • 1 (398 gram) can fire roasted diced tomatoes
  • 1 (15 ounce) can balck beans, rinsed, drained
  • 1 teaspoon hot sauce, use your favorite
  • Salt and pepper, to tase

How to Make

  • Step 1: Spray a large pot lightly with oil and sear the chicken breast, just a few minutes, sprinkle the fajita seasoning over the chicken, stir well

  • Step 2: Add the onions, sweet peppers and jalapenos to the chicken, continue stirring and cook for about 8 minutes until the vegetable are soft and the chicken is cooked

  • Step 3: Pour in the broth, black beans and tomatoes, bring to a boil, turn heat down and simmer for about 30 minutes. Add hot sauce and season with salt and pepper Ready to serve
