Ingredients

  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons peppercorns
  • 2 teaspoons sugar
  • 1 pound jumbo shrimp (shelled and deveined)
  • 2 tablespoons oil (olive oil)
  • 1 chili pepper (chopped fine and seeded)
  • 1 teaspoon fresh ginger root (grated)
  • 3 garlic cloves (minced fine)

How to Make

  • Step 1: Combine salt, pepper, peppercorns, and sugar with a mortar and pestle; set aside.

  • Step 2: Rinse shrimp under cold running water; pat dry with paper towel.

  • Step 3: Heat oil in a large skillet over medium heat.

  • Step 4: Add shrimp, chili pepper, ginger and garlic; stir-fry 4-5 minutes or until shrimp are cooked.

  • Step 5: Add salt and pepper mixture and stir-fry for one minute more, making sure it doesn't burn.
