  • 2 cups tomato (seeded and chopped)
  • 1 cup cucumber (seeded and chopped)
  • 6 ounces black olives (drained and sliced)
  • 1/4 cup pepperoncini peppers (sliced into thin rings)
  • 1/2 cup Italian salad dressing (I used Zesty Italian)
  • 1/3 cup green onion (sliced, white and green parts)
  • 1/4 cup fresh parsley (minced)
  • 4 ounces feta cheese (crumbled)

How to Make

  • Step 1: Bring 4 quarts water to a boil; add tortellini and 1 tablespoon oil and cook, stirring frequently, 8 minutes. Drain, rinse with cold water, and drain well.
