Ingredients

The ingredients are:
  • 1 butternut or acorn squash, 2 1/4 pounds, peeled, seeded, cut into 1 1/2 inch pieces
  • 1 1/2 cups red seedless grapes
  • 1 medium sweet onion, cut into 1 inch pieces
  • 1 tablespoon fresh sage leaves, cut into thin slices
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter, melted
  • Salt and pepper to taste
  • 1/4 cup pine nuts, roasted

How to Make

  • Step 1: Preheat the oven to 425f

  • Step 2: Place the squash,grapes, onion and sage in a zip lock bag.

  • Step 3: Pour in the melted butter and oil, mix well coating all the squash and onions and grapes. Season with salt and pepper

  • Step 4: Spread out on a lightly oiled cookie sheet, place in oven and bake for up to an hour

  • Step 5: Stir occasionally and bake until the squash and onions are starting to brown and are fully cooked Enjoy
