Ingredients

The ingredients are:
  • 1 pound chicken breast, boneless, skinless (or thigh)
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon oil (olive oil)
  • 1 garlic clove, minced
  • 14 ounces reduced-sodium chicken broth (fat-free)
  • 1 cup broccoli, chopped into small pieces
  • 2/3 cup couscous, instant (one 5.8 ounce box, without spice packet)

How to Make

  • Step 1: Slice chicken into thin strips about an inch long and about 1/2-inch wide.

  • Step 2: Combine ginger, cumin, turmeric, salt and pepper; rub over chicken and set aside.

  • Step 3: Heat olive oil in a large skillet until shimmering; add chicken and garlic and saute 5 minutes, until chicken is light brown on all sides.

  • Step 4: Add chicken broth and broccoli and bring to a boil; then reduce heat to low, cover and simmer 10 minutes or until chicken is cooked through.

  • Step 5: Stir in couscous, cover and let stand for 5-7 minutes, until liquid is absorbed.
