Ingredients

The ingredients are:
  • 1/2 cup dry pasta (I used Wacky Mac Veggie Spirals)
  • 2 cups broccoli, cut into small florets
  • 2-3 green onions, sliced
  • 1/2 cup raisins (or dried cranberries)
  • 1/4 cup sunflower seeds
  • 1/4 cup pepper jack cheese (I used shredded but use chunk if that is more to your preference)
  • About 4 Tablespoons (+ or -) Italian Dressing

How to Make

  • Step 1: Cook pasta according to package directions. Meanwhile, cut and rinse broccoli. Place in colander. When the pasta is cooked, drain the pasta over the broccoli to slightly blanch it. Rinse pasta and broccoli under cold running water to stop cooking and retain the broccoli's bright green color.

  • Step 2: Mix in all other ingredients and thoroughly combine. Best if chilled overnight, stirring occasionally and adding more dressing if needed.
