  • 2 catfish filets, 6 ounces each
  • 1/2 cup sweet onion, minced
  • 1/4 cup red pepper, finely chopped
  • 1/4 cup green pepper, finely chopped
  • 1 large jalapeno pepper, seeds and membrane removed, finely chopped
  • Light spray olive oil

  • Step 1: Preheat oven to 375f

  • Step 2: Lightly spray an oven proof shallow baking dish, place fish in the dish

  • Step 4: Bake for approximately 12 minutes or until the fish flakes easily
