  • 2 medium bananas (mashed)
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger

How to Make

  • Step 1: Preheat oven to 350F. Coat a 8-inch square cake pan with nonstick cooking spray (or grease and flour pan)

  • Step 2: In a large mixing bowl with electric mixer, cream butter and brown sugar.

  • Step 3: Beat in egg, milk, vanilla, and mashed banana until blended.

  • Step 4: Combine remaining dry ingredients and spices. Stir the dry ingredients into the butter mixture until moistened.

  • Step 5: Spread into prepared pan. Bake 25-30 minutes, until cake springs back when lightly touched with finger.

  • Step 6: Cool in pan on wire rack. Cut into 9 squares.
