Ingredients

The ingredients are:
  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste (rough ground pepper is nice)
  • 2 tablespoons butter, melted
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 1/2 teaspoon dried rosemary, rubbed

How to Make

  • Step 1: Preheat oven to 375f degrees. Mix together in a small bowl, melted butter, lemon juice, lemon zest and rosemary.

  • Step 2: Lightly spray a low sided oven sheet or broiler pan with veggie spray. Sprinkle salt and rough ground pepper on both sides of chicken breasts and place on oven sheet. Brush both sides of chicken with butter mixture.

  • Step 3: Bake on centre rack of oven for 20 minutes, Turn chicken and brush again on both sides with butter mixture; bake a further 20 to 25 minutes or until juices run clear.

  • Step 4: Alternately; Broil for 15 minutes, until lightly browned. Turn chicken , brush with butter mixture and broil 15 minutes longer or until juices run clear.
