  • 1 teaspoon lemon rind, grated
  • 3 cups powdered sugar, sifted
  • 3 tablespoons lemon juice

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Grease and flour 2 8-inch square pans.

  • Step 3: Cake: Cream margarine and sugar.

  • Step 4: Blend in eggs and vanilla.

  • Step 5: Sift together sifted cake flour, baking powder and salt.

  • Step 6: Add alternately with milk, mixing well after each addition.

  • Step 7: Pour into prepared pans.

  • Step 8: Bake for 30 to 35 minutes and cool.

  • Step 10: Frosting: Cream margarine; blend in grated lemon rind.

  • Step 11: Add sifted powdered sugar alternately with lemon juice

  • Step 12: Beat until fluffy.

  • Step 13: Frost cake with lemon frosting.

  • Step 14: If desired, decorate top of cake with additional preserves.
