  • 1 pound fusilli pasta, dry
  • 6 cups water, boiling
  • 1 teaspoon salt
  • Sauce
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup onion, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon garlic, smashed
  • 2 cups roma tomatoes, roughly chopped
  • 1/2 cup water, pasta
  • 1 tablespoon basil, fresh, torn
  • 2 teaspoons chicken bouillon
  • 1 teaspoon parsley, dried
  • Topping
  • 2 ounces parmesan cheese, shredded
  • 1 tablespoon basil leaves, fresh, minced

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente, drain saving 1/2 cup water.

  • Step 2: Meanwhile, heat oil in a large saucepan and cook onion until lightly browned, season lightly.

  • Step 3: Add garlic, tomatoes, pasta water and 1 tablespoon basil and cook over low heat for 15 minutes until tomatoes soften.

  • Step 4: Add seasoning, parsley and bouillon.

  • Step 5: Mix until combined and cook a couple more minutes.

  • Step 6: Serve cooked fusilli pasta with sauce.

  • Step 7: Garnish with Parmesan cheese and additional basil leaves.
