  • 1 3/4 cups flour
  • 3/4 cup malted milk powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon brown sugar, packed
  • Wet
  • 2 egg yolks
  • 1 3/4 cups buttermilk
  • 1 tablespoon canola oil
  • 1 tablespoon vanilla extract
  • Whites
  • 2 egg whites, beaten stiff
  • 3 tablespoons granulated sugar

How to Make

  • Step 1: Combine dry ingredients.

  • Step 2: In a mixing bowl, whisk together the flour, malted-milk powder, baking powder, baking soda, brown sugar and salt.

  • Step 3: Combine wet ingredients.

  • Step 4: In a separate medium bowl, whisk the egg yolk, buttermilk, oil, and vanilla.

  • Step 5: Mix the batter.

  • Step 6: Whisk the wet ingredients into the dry ingredients until just moistened.

  • Step 7: Whip egg whites.

  • Step 8: In a clean, separate bowl, use an electric mixer to beat the egg whites until soft peaks form.

  • Step 9: Gradually add the sugar and continue to beat until the mixture is glossy.

  • Step 10: Fold into batter.

  • Step 11: Whisk about a quarter of the beaten egg whites into the main batter, then gently fold in the remaining whites.

  • Step 12: Let the batter rest for 10 minutes while your waffle iron preheats.

  • Step 13: Cook the waffles.

  • Step 14: Lightly coat your waffle iron with cooking spray. Spoon the batter onto the iron and cook until the waffle is golden and crisp.

  • Step 15: Serve.

  • Step 16: Repeat with the remaining batter and serve immediately with your favorite toppings.
